1/2 lb Boneless Chicken Breast, diced
1/2 tsp cajun seasoning
10 oz bag of corn tortilla chips
4 oz shredded Cheddar or Mexican Cheese
Sprinkle chicken with cajun seasoning and cook in small skillet with a dash of oil on medium heat until finished, about 5 min. Spread bag of chips evenly over foil lined baking sheet. Sprinkle cooked chicken over chips, cover with cheese. Bake in oven at 400 degrees for about 5 minutes until cheese is melted.
These nachos are a super quick and simple meal or snack. It requires very few and inexpensive ingredients, and can be done in 15 minutes from start to finish. Start by dicing about 1/2 lb of chicken into really small pieces. You can use more chicken if you want more meat. You could also make this with ground beef instead. In a small skillet, cook the chicken with cajun seasoning and a dash of oil on medium heat for about 5 minutes until done.
Line a large baking sheet with aluminum foil. Spread chips evenly on pan, sprinkle with chicken bits, and cover with cheese. I used about 1/2 of an 8 oz bag, maybe a little more. Bake in the oven for about 5 minutes, or until cheese is melted, on 400 degrees. This recipe is easily enough dinner for 4-5 people, or a snack or appetizer for more.
