6 boneless catfish filets
3/4 cp white corn meal
2 tsp cajun seasoning
1 tsp cayenne red pepper
1 tbs gluten free bread crumbs
oil for frying
Mix corn meal, seasonings, and bread crumbs in a bowl. Beat eggs in another bowl. One at a time, dip catfish into eggs, and then coat in seasoned corn meal and place into hot oil to fry for about 1 minute on each side. Then place onto a tray lined with paper towels. Once they are all cooked, remove paper towel and place in oven at 350 degrees for about 2-3 minutes.
As a child I never really cared for fried catfish, but my husband loves it, so over the years I tried a couple times to make it, without much success. Then my sister moved in and this is one of the first things she cooked for us. It is so good. Like We can’t get enough of this catfish. We eat it about once a week, and one filet usually isn’t enough for us.
To start you will need 6 boneless catfish filets, 3/4 cp white corn meal, 1 tbs gluten free bread crumbs (you can find store brands or get this), 2 tsp cajun seasoning, 1 tsp cayenne red pepper, 3 eggs, and some oil for frying.
Beat the eggs in a bowl, and combine the corn meal, seasonings, and bread crumbs in another bowl. One at a time dip the filets into the egg, and then coat thoroughly with the seasoned corn meal. Place into hot oil to fry. They need about a minute per side until they get crispy and golden. Then put them on a tray lined with paper towels to soak up the extra oil. When they are all done, remove the paper towels and place the tray in the oven at 350 for 2-3 minutes just to help get them extra crispy. Then serve. This catfish has just a little kick to it which makes it good by itself, but I like to sprinkle a little lemon juice on them.
